What do you call a pumpkin at a beach?, a life gourd (gourd is a pumpkin)
Most people would assume that since there are so many leftovers and such enormous pumpkins in Albion Park's agriculture area, they are useless and can only be cooked slowly with other vegetables. But when winter approaches, it turns out that there are a few excellent ways to use pumpkin!
Why is pumpkin good for you? Pumpkin boosts your immunity also pumpkins offer vitamin C, vitamin E, iron, and folate -- all of which strengthen your immune system. More pumpkin in your diet can help your immune cells work better to ward off germs and speed healing when you get a wound.

Pumpkin pie- a creamy spiced desert, with pumpkin based custard. Traditionally made with a warm spiced pumpkin custard filling and flaky pie crust.
Pumpkin curry- a spicy, yet so healthy chickpea infused recipe steaming hot. Featuring diced pumpkin is simmered in a curry base made with chopped onions, tomatoes, garam masala, cumin and other pantry staples.
Stuffed pumpkin-a pumpkin with a gorgeous stuffing of rice, fennel, apple, pomegranate seeds and pecans perfect if you are vegan!
Pumpkin pie smores- The classic american treat that you see your favorite characters from tv shows and movies sitting around a campfire with a hint of pumpkin spice.
Roasted pumpkin lasagne- It features alternating layers of roasted pumpkin with cherry tomato sauce, nutmeg-spiced spinach and creamy béchamel. It's well worth the effort for the irresistible combination of sweet, earthy flavors and crisp parmesan topping.
